Where Winemaking Begins in the Vineyard
      In the heart of the legendary Snake River Valley, with the Owyhee Mountains visible in the distance, lies the scenic Hidden Valley—home of Sawtooth Winery—Idaho State’s second largest winery.  Founded in 1988, Sawtooth has developed a loyal following and has earned a reputation for creating exceptional handcrafted wine.

      The idyllic setting of Canyon County — Idaho’s most prolific agricultural region — has proven to be ideal for growing vinifera grapes of extraordinary quality.   The soil structure, geography and climate of the area all play a role in producing fruit of distinct character, resulting in wines that are rich with flavor and complexity.

       Winemaker and General Manager Brad Pintler believes successful winemaking begins in the vineyard.  Using grapes primarily from its own vineyards allows Sawtooth Winery to maintain the highest standards of excellence.

       Brad carefully guides each variety of fruit to bring out the intricate characteristics of the wines. The wines

 are fermented and aged in small cooperages and stainless steel tanks until it is time for blending.

      Sawtooth Winery produces several European wine varietals, including Pinot Gris, Chardonnay, Cabernet Sauvignon, Merlot and Pinot Noir — wines that are continually recognized for their high quality and exceptional taste.  The wines’ distinct labels depicting a beautiful scene of the Sawtooth Mountains represent the grandeur of Idaho’s natural wonders.

Tasting Notes:
Aromas of peach and pears that lead way to crisp acidity. Bright fruit flavors throughout and a beautiful clean finish.

Fermentation: The grapes were hand harvested and whole berry pressed which produces high quality extracted juice. 50% of the wine was fermented cold in a stainless fermenter. 50% was barrel aged on the lees for 5 months.

Tasting Notes: Fresh aromas of ripe apple and pear with a hint of mineral proceed rich fruit flavors in the mouth and a crisp finish.

Vineyard:  Sawtooth Vineyard

Fermentation:  The grapes were hand harvested and whole berry pressed to maintain the delicate fruit aromas and flavors of the varietal.  Fifty percent of the Viognier was barrel fermented in older French cooperage and 50% was tank fermented to preserve the varietal fruit.  The two styles were blended together, along with 25% barrel fermented Rousanne to make a wine that is intense in fruit aromas, yet rich and flavorful in the mouth.

Tasting Notes:
Rich aromas of black fruits, vanilla, spice and a hint of mint precede intense flavors of the spice and black berries. Rich round and long in the mouth.

Fermentation:
The grapes were hand picked and then destemmed to a red fermenter and cold soaked for 48 hours.  The wine went through slow fermentation for two weeks for optimum extraction before being pressed into barrels and aged for 12 months.

Tasting Notes:
This wine has intense aromas of spices, black berry, and soft oak. It has a big mouth feel, exploding flavors at the beginning, and carrying all the way through the velvety tannins to a long finish.

Fermentation:  
The grapes were picked later in the season to obtain maximum flavors, then destemmed into red fermentors. The wine went through a 3 week maceration to achieve maximum flavors and intensity before being pressed to small oak barrels for 16 months of aging.

Tasting Notes:
Intense aromas of blackberry pie, spice and mint and oak give way to big structure, round, ripe tannin and a long finish.

Vineyards: 
Sawtooth

Fermentation:
The fruit for our Reserve Cabernet comes from our oldest block on the hill next to the winery. Shallow volcanic soils, open canopies, small berries and yields give this wine intense flavor and structure. We carefully hand pick, press, and slow ferment this wine. We then barrel age the wine for 22 months on new French oak barrels before bottling.

Tasting Notes:
Intense aromas of spice, mint and vanilla. It has well integrated tannins and rich full mouth feel that leads to a lingering finish.

Fermentation:
This wine received 2 weeks of extended maceration, then pressed and moved to barrel. The wine was aged for 16 months in new French Oak barrels.
